Groats are anancient grain also known as Kashi. It is a whole grain hulled from buckwheat kernels that is gluten free and full of antioxidants and protein.
1/4 cup soy sauce or tamari
1-2 cups of water
1 cup groats
1 onion diced
l bell pepper diced
1 stalk celery sliced
2 green onions slice (green only)
1 tsp. sweet paprika
Kosher or Sea Salt to taste
3 tbs. olive or grape seed oil
Step 1. ( can be done ahead and refridgerated)
Bring water and soy sauce to boil in pan on high heat. Stir in groats and when liquid has been absorbed (about 10 minutes) remove from heat and cover.
On medium heat in a large saute pan or wok, heat olive or grapeseed oil. Add onions, celery and peppers. Cook until slightly carmelized. Stir occasionally. Stir in paprika. Add pre-cooked groats. Set aside but keep handy and warm.
In a separate bowl whisk together the eggs and pour into the above mixture. Keep on medium low heat. Stir occasiionally as eggs cook. Garnish with green onions. You may add a little extra soy sauce if desired when served.
