Cooking with Jardin-Pimped Out Spanish Rice

2 cups long grain rice

1 cup diced celery

1 cup diced onions

1 cup diced tomatoes

1 cup diced ham or suasage (bacon works too)

4 cups chicken stock

1/4 cup oilive oil

 

Instructions:

Saute sausage in oil. Use a wide skillet that has a lid. Add vegetables in one at a time starting with celery. Cook until tender. Add the rice and stir. Pour in the chicken stock and cook on high heat uncovered until all liquid has evaporated out. Turn off heat and cover, letting steam finish out the rice mixture. Let sit covered for about 10 minutes, then serve.
