Hoppin' John Salad
Ingredients
1 pound black eyed peas
1 onion chopped
4 cloves garlic chopped
2 stalks celery chopped
1 red bell pepper diced
½ pound turkey ham cubed
½ cup olive oil
½ cup seasoned rice vinegar
pinch of sea salt
pinch of black pepper
*optional fresh chopped parsley
Directions:
Soak peas for 1 hour then cook in water until tender (approximately 1 hour). Drain peas and let cool before assembling salad.
Combine all ingredients in large bowl and season to taste. Chill completely and serve.
