Cooking with Jardin- Southwestern Beef & Polenta Chowder
Ingredients:

1/4 cup grape seed oil or olive oil
1 pound precooked beef cubed or in small pieces
2 cups polenta
4 cups chicken stock
6 tomatoes roasted and pureed with the previous 4 coups of chicken stock
1 celery stalk sliced
1onion choppe
3 cloves of garlic chopped
2 cups corn (frozen)
1 tsp cumin
1 tsp chili powder
salt & pepper to taste
Optional: 1-2 Tbsp Jalapeno, 1-2 Tbsp. Pili Pili Relish

Saute beef, onions, garlic, and celery in oil until almost done. Combine chicken stock and roasted tomatoes and add to sauteed ingredients. bring to a moderate boil. stir in polenta and continue to cook until stock begins to thicken. Add in corn and seasoning and any optional ingredients. Adjust seasoning to taste and serve.
