Garbanzo Bean, Beet & Feta Salad
Ingredients:
2 cups precooked (canned) garbanzo beans
3 cloves garlic
1 1/2-2 tbsp. lemon juice
1/4 tsp sea salt
2 tbsp. balsamic vinegar
4 tbsp olive oil or grape seed oil
1 tbsp Italian spices
1 1/2 cups cooked beets
6 cups lettuce or salad greens mix
2 large tomatoes diced
1/2 cup crumbled Feta cheese
*optional 2-3 tbsp chopped pecans
Instructions:
Assemble garbanzo beans, Feta, beets, garlic, tomatoes and spices in large bowl. Add oil, lemon juice, vinegar and sea salt. Toss to coat mixture. Place a handful of greens on a plate and top with an ample serving of the garbanzo bean mixture and top with pecans.
