Cooking with Jardin-Zesty Collard Greens


4 bunches of collard greens (washed, stems removed and chopped)

1 stalk of celery

1 onion chopped

2 tbs. chopped garlic

1 jalepeno minced (optional)

1/4- 1/2 cup olive or grape seed oil

2-3 tbs. seasoned rice vinegar

salt to taste

1/4 cup of pre cooked smokey meat - bacon, turkey bacon (optional)


Preheat oil in a heavy skillet or saute pan. Quickly add greens, onions, peppers, garlic and celery and toss with tongs. Keep tossing as greens begin to wilt to prevent scorching. Add meat if desired. Add seasoned rice vinegar. Toss until well coated. Lower heat to medium low and cover with lid. Steam approximately 10 minutes or until greens are tender. Season to taste. Serve with your favorite southern foods.
