Jardin cooks up an amazing Cheese Stratta.
1 can Fire Roasted Green Chiles
8 eggs (beaten with a dash of milk or water or use liquid eggs instead.)
2 cups corn (fresh or frozen)
1 pkg corn tortillas shredded
1 fresh Anaheim pepper diced
1/2 cup sour cream
1/2 cup fresh cilantro
4 cups shredded cheese of your choice (we're using Mexican Cotija Cheese)
Using a baking dish, cover the bottom of the pan with the tortilla shreds. Add the corn layer and then a layer of cheese. Add layer of egg mixture, then layer of green chilies. Layer with remaining cheese.
Bake at 350 degrees for appoximately 25 minutes or until nicely browned.
Garnish with fresh cilantro, a dollop of sour cream and a dollop of fresh tomatillo sauce.
