Jardin makes a delicious Gnocchi Mac & Cheese.
Gnocchi Pasta (a traditional mac & cheese alternative)
1 package of fresh gnocchi pasta from the refrigerator section at the grocery store
1 cup heavy whipping cream
1 cup sour cream
2 cloves garlic chopped/minced
2 cups grated cheese (your choice of good melting
Seasoning to taste; salt, pepper, vegetarian chicken base (dry)
Pre-heat oven to 350 degrees
If using fresh pasta or dry pasta, follow cooking instructions on the package and cook until tender but firm. (al dente). Drain pasta, rinse and place in a large bowl. In another bowl combine egg, cream, sour cream, garlic and Parmesan cheese. Pour mixture over pasta and toss to cover evenly. Pour the pasta into an oven safe baking pan and top with additional cheese.
Bake for 20-30 minutes until hot all the way through and golden brown. Serve immediately.
Chef’s side note: This is a recipe that can be made ahead and kept frozen (will require at least an hour to bake), or made ahead and frozen and thawed and then baked as needed.
