1 pound ground lamb
2-3 cups mashed potatoes
1 cup frozen peas
1 cups shredded carrots
1 cup frozen corn
1 cup diced onions
2 cloves garlic minced
1 tsp. herbs de provence (sprinkle)
2 TBS Ketchup
¼ cup beef stock
¼ cup oil
Shredded Irish Sharp Cheddar Cheese
Before assembling all ingredients:
Prepare mashed potatoes and set aside.
Pre-heat oven to 350 degrees
Sauté meat in large pot/skillet using a little bit of oil. Add diced onions,and garlic. Cook with meat until water releases from vegetables and meat begins to render fat. Add herbs and spices. When done, remove from heat and spoon into a large baking/casserole dish.
Mash potatoes with one egg and cheese. Season with salt and pepper (or other options).
Drop scoops of potatoes and spread evenly over lamb mixture. Bake at 350 degrees for 20-25 minutes until golden brown. Serve immediately.
