Mint Chicken Sauté with Rice Noodles
Ingredients:
2 boneless skinless chicken breast sliced into thin strips ½ pound rice noodles cooked per instructions ½ cup vegetable oil 1 stalk celery sliced ½ onion sliced 2 tbs. garlic finely chopped 6-10 mint leaves Juice from ½-1 lime ¼ cup oyster sauce 3 green onions sliced into small slivers Instructions: Pre cook the noodles according to directions. Please note these noodles cook very quickly, so watch carefully and do not overcook. Rinse and drain the noodles and set aside. Heat oil in wok or large pan until hot. Quickly add chicken and garlic. Add celery, onions and mint leaves and stir for a few minutes then add oyster sauce, rice noodles, lime juice and stir quickly until well combined and hot all the way through. Garnish with freshly chopped green onions and serve. |
