Definitions from www.epicurious.com The Food Dictionary
kibbeh; kibbi [KIH-beh, KIH-bee] Particularly popular in Lebanon and Syria, this Middle Eastern dish has myriad variations but basically combines ground meat (usually lamb), bulghur wheat and various flavorings. The meat may be raw or cooked. bulghur wheat; bulgar [BUHL-guhr] A nutritious staple in the Middle East, bulghur wheat consists of wheat kernels that have been steamed, dried and crushed. It is often confused with but is not exactly the same as cracked wheat. Bulghur, also called burghul , has a tender, chewy texture and comes in coarse, medium and fine grinds. It makes an excellent wheat Pilaf and is delicious in salads and in meat or vegetable dishes, as with Kibbi. Ingredients: 1 pound fresh ground beef or may substitute ground lamb or ground chicken 3 cups Bulgur Wheat 3 cups hot (boiling) water Fresh Mint Leaves Chopped 1 onion chopped 4-6 cloves garlic Salt & Pepper to taste Aromatic Spice such as Tandoori, Cumin, Curry or Turmeric Instructions: Place dry Bulgur Wheat in a bowl and pour on boiling water.
