Mango Fool
My wife inspired this light and exotic dessert when we thought we were all out of ideas for an event we were catering. The secret to a good Fool is to taste as you go. Some fruits require more sugar and any fruit with little acidity benefits from a bit of lemon or lime juice. This particular dessert can be assembled like a parfait. It presents well and the flavors are dreamy.
Ingredients: 14 ounces mango fresh or frozen pureed 2 1⁄2 cups heavy whipping cream Mascarpone Cheese (optional) Coconut Syrup Coconut Flakes Fresh Lime Slices Sugar or Agave to taste Instructions: Using the whisk attachment on a stand mixer combine whipping cream and mascarpone cheese and add coconut syrup during the final stages and adjust to taste. In a blender puree mango until smooth. Assemble dessert in a parfait dish or dessert bowl layering fruit and cream mixture. Garnish with Coconut Flakes, Lime Wedge and a shortbread cookie. |
