Steak Maztlan
Ingredients
1 cup tomatoes canned or fresh
1 bunch cilantro chopped
1 fresh jalapeno seeded and chopped or finely diced Ortega Chili
5 green onions chopped
4-5 cloves garlic peeled and chopped
2-3 tbs. Oil or butter
1-cup fresh Brown Beef Stock or beef bouillon dissolved in one-cup water
1 tsp. Peppercorn Melange of cracked pepper
1-tsp. cornstarch dissolved in ½ cup cold water
Directions: Sauté onions and garlic in oil or butter. As they become tender add tomatoes, jalapeno and cilantro. Stir in beef stock and simmer. After simmering for 3 minutes stir in cornstarch mixture to thicken. Adjust flavor with seasoning and serve over your favorite steak. Steak Choices: Filet Mignon Beef Shoulder Tenders (available at Black Market Gourmet) Rib Eye Lamb Chops Etc... Pan sear steak in high amount of oil. Turn and brown on both sides. Place in preheated 400-degree oven for 8-10 minutes for medium rare. |
