Jambalaya Chowder

Ingredients:
1 pound chicken chopped
1 pound shrimp peeled & deviened
2 sausage links (smoked beef, chicken kielbasa etc)
2 cups corn
2 cups okra
2 cups lima beans
2 celery stalks diced
1 onion diced
1 pepper diced
½ cup oil 1 gallon chicken stock
½ cup flour
2 cups cream
Seasonings to taste; salt, pepper, cayenne pepper etc.

Instructions:
Pre-heat oil in a large pan (13 quart Dutch oven or stock pot with heavy bottom). Add chicken and sausage and sauté until chicken is mostly done. Add in chopped celery, onion and peppers (trinity). Prepare the roux by adding ½ cup flour to pot and stir until dissolved. Add chicken stock, corn and lima beans. As the stock begins to thicken add the heavy cream and adjust your spices to taste. Add okra and shrimp and cook until shrimp are done. Serve when ready.
