Cooking with Jardin- Basmati Rice Cakes

Ingredients:

2 cups pre-cooked basmati rice
1/4 cup chopped green onion
1/2 cup julienned carrot
1/2 cup red onion chopped
1/2 red bell pepper
2 cloves garlic chopped
1 tsp ginger
1 tsp Tandoori spice
1-2 eggs beaten
3/4 cup heavy cream
1 cup oil (grape seed or olive)
Panko bread crumbs
salt & pepper to taste

In a large bowl combine cooked rice with onions, peppers, green onions, carrots, garlic, ginger, eggs and cream. Stir Tandoori into mixture. Shape rice cakes into 1-2 inch patties and dredge through breadcrumbs. Fry on medium high in the oil. Serve with a cool yogurt cucumber sauce.
