Tart-Tatin
Servings: 8 Ingredients: This French Tart became famous around the turn of the century when the Tatin sisters served it at their restaurant in a small village outside of Paris. It will take approximately one hour to make and should be served cool. Cooling time may be 1-2 hours. Although Tart Tatin is very simply in its preparation, the reward is the unique texture and fabulous flavor. Serve with cream or ice cream. 4 tbsp. Butter 1 cup Sugar 4-5 baking apples of your preference peeled & sliced 1 tbsp. Vanilla Pastry Dough or Puff Pastry Dough Instructions: Melt the butter in a heavy skillet (cast iron) and add sugar. Cook at a medium temperature until the mixture becomes thick. As the syrup begins to brown, arrange the apples on top of the butter/sugar syrup in the pan layering the apples as the syrup caramelizes. Remove from heat. Place pastry dough over the top of apple mixture and bake for 25 minutes and the syrup begins to bubble at the edge of the crust. Let cool and then invert pan onto serving platter and serve.
