Cooking with Jardin-Zesty Collard Greens Saute

Recipe:

Ingredients:
4 bunches of collard greens washed, stems removed and chopped
1 celery stalk sliced
1 onion chopped
2 tbsp chopped garlic
* 1 jalapeno pepper chopped
1/4-1/2 cup olive or grape seed oil
2-3 tbsp. seasoned rice vinegar
salt to taste
*1/4 cup any precooked (crispy) smoked meat- bacon, turkey or beef bacon
*optional

Preheat oil in heavy skillet or saute pan. Quickly add greens, onions, peppers, garlic and celery and toss with tongs. Keep tossing as greens begin to wilt to prevent scorching. Add meat if desired. Add seasoned rice vinegar. Toss until well coated. Lower heat to medium low and cover with a lid. Steam approximately 10 minutes or until greens are tender. Season to taste. Serve with your favorite southern foods.
