Chef's Corner: Making Bad Food Good
(Ivanhoe Newswire) -- 20 million Americans have diabetes. And 60 million live with cardiovascular disease. It’s what we put in our body that puts us at risk. Now, one chef has found a way to make your favorite comfort foods good for you. And everything at her restaurant is diabetic-friendly.
“We want it to look as close as it can to the unhealthy version because that’s what America’s eyes are accustomed to,” LeGrand said. At her restaurant, A Touch of Sugar, which is an old southern term for diabetes -- she tailors traditional high-fat comfort foods for people with diabetes and heart disease. “Healthy food can taste great, and pretty close to the real thing,” said LeGrand. To make her special herb-crusted oven-fried tilapia: Pour on buttermilk cream. Then sprinkle paprika, garlic, onion, coarse black pepper, and a dash of salt. Cover the fish in cornflakes -- that’s what makes it fry! And for extra flavor add some spices to the cereal. Another quick spray and it’s ready to fry in the oven! Now, for dessert … sorbet. Pick your favorite fruits, and blend along with sugar, water and lemon juice. Spoon out into cups and freeze.
